    Aloo Kurkure Recipe

    Aloo or potato is, perhaps, the most obedient of all vegetables as it gives you the scope to try out innumerable number of recipes. The crispy-crunchy Aloo kurkure is a very tasty snack item and a great kitty party recipe. You can prepare it in less than 15 minutes. Yes, we know you are excited so let’s get started!

    Preparation Time - 5 min

    Cooking Time - 10 min

    Total - 6 aloo kurkures

    Ingredients

    Boiled potato (peeled and mashed) - 1 cup
    Mint leaves (chopped) - ½ cup
    Plain flour or Maida - ⅓ rd cup
    Green chillies (finely chopped) - ½ tbsp
    Cumin seeds or Jeera (roasted) - ½ tsp
    Lemon juice - ½ tsp
    Beaten rice or Poha (coarsely ground) - ⅓rd cup
    Salt - as per taste

    Procedure

            Take a large bowl to mix potato, mint leaves, green chilli, cumin seeds, lemon juice and salt. Mix the ingredients properly with hand, spoon or in a food processor.
            In a different bowl, make a smooth dough by adding water to the flour.
            Take the coarsely-ground beaten rice on a plate.
            Make 6 equal portions of the mixture and turn them into medium-sized round balls with hands.
            Now heat oil in a wok or a pan (to make it less oily).
            Dip the potato balls in the dough and then coat them with the beaten rice.
            Fry the potato balls in the oil till they attain a nice golden brown colour.
            Once done, take them out and place them on a tissue paper so that it soaks the excess oil from the potato balls.
            Serve them hot with garlic chutney or any  other chutney of your choice.
